Project Background
This kitchen engineering case at the Hilton Greater China Hotel in Futian, Shenzhen, demonstrates Hilton’s strict requirements for high-quality kitchen equipment and rigorous operational standards. The entire procurement process was carefully planned and evaluated through multiple selection stages to ensure that all equipment met Hilton’s global standards while supporting large-scale, high-efficiency hotel operations.

Equipment Planning and Requirement Definition
At the early stage of procurement, Hilton’s engineering team worked closely with the culinary team to define a detailed equipment list, including cooking equipment, refrigeration systems, washing equipment, and storage solutions. Clear functional requirements were set for each equipment category based on the kitchen layout and zoning design.
For example, gas ranges were required to offer multiple flame control levels to accommodate diverse Chinese and Western cooking techniques. Steam cabinets were specified with large capacity and rapid heating capabilities to handle peak service demands efficiently.
Supplier Selection and Equipment Standards
Hilton invited multiple well-known commercial kitchen equipment suppliers to participate in the bidding process. After several rounds of evaluation, a supplier with extensive experience in hotel kitchen projects was selected. The chosen equipment not only delivered excellent performance but also met Hilton’s strict energy-saving and environmental standards.
Induction cookers with low energy consumption and fast heating performance were adopted to significantly reduce energy usage. Refrigeration and freezing equipment used environmentally friendly refrigerants to further lower carbon emissions and support sustainable hotel operations.
Installation and Commissioning
During the installation and commissioning phase, Hilton’s engineering team worked closely with the supplier to ensure all equipment was installed in accordance with hotel design specifications and operated reliably during trial runs.
Refrigeration equipment underwent multiple rounds of testing to confirm stable temperature control under high-load conditions. Dishwashing equipment was also tested for efficiency to ensure it could handle large volumes of tableware within short service periods.
Project Completion and Results
The entire project, from equipment selection and procurement to installation and commissioning, took approximately two months and was successfully completed before the hotel’s opening. This kitchen engineering case reflects Hilton’s commitment to high standards, refined management, and operational excellence.
